Traditionally sour, with vinegar, but I prepare it with
honey and orange juice. The dinner guests that I've offered it to
are often surprised that beets can
be this good.
for three or four
Start about two hours before dinner
9-12 medium size beets (beets vary in size, adapt number to what you
find)
(optional) 5-10 strips of bacon (ready-to-eat is easiest)
1-2 TBsp (5-10 ml) liquid honey
1 cup, 250 ml orange juice
1 tsp marjoram
potatoes
(optional) eggs
(optional) spinach
Cut the leaves off at about ½ inch, 1 or 2 cm from the
beet - not too close because then the beets will 'bleed out,'
and don't yet cut
out bad parts on the beets for the same reason
Wash the beets and put in a large pan, beets should be covered
with water, under water;
Bring to a boil, lower heat and cook for an hour and 15 minutes
(very fresh beets can go a little shorter;)
Shortly before the beets are ready put honey and orange juice
in a skillet, sprinkle marjoram over it, add bacon (break strips in
four of five pieces) and heat up slowly;
(if starting with raw bacon fry it beforehand in that skillet,
drain grease before adding honey and orange juice;)
Take two or three beets out of the pan with a slotting spoon, put
in a colander and rub off the skins under running cold water, cut
off tops, bottoms and bad parts, and then put beets on a deep plate;
(be careful with the beets' cooking water, it can leave stains;)
In batches of two or three cut skinned beets in 3 or 4 slices, then cut
those slices
in 4, 6 or 9 pieces and add to the honey/orange juice, cook
slowly for ten or fifteen minutes
Serve with potatoes and boiled eggs
Spinach goes well with this dish

2 Lb, 1 kg washed spinach
a knob of butter
fresly grated nutmeg
(optional) 2-3 TBsp wheat bran
Put spinach in a large pan (with lid;)
Bring 2 cups, ½ water to a boil, pour over spinach,
cover, put on high heat for 12 minutes;
Drain spinach into colander, press out some more water with a
wooden spoon;
Put cooked spinach in a bowl, add butter and nutmeg, and some
wheat bran when it's still watery;
boiled eggs go well with spinach
Instead of spinach, you could cook the beet leaves, but it's a lot of
work to cut out the large veins and cut up the leaves - boil for ten minutes
